Chef Franco Brodini currently holds the title of Shangri-La Group’s Regional Executive Chef, Southeast Asia and Australasia, overseeing the food and beverage, culinary and commercial strategy across this region. Prior to this appointment, Chef Franco was the Executive Chef at Shangri-La Singapore since August 2015, overseeing the first hotel in the Shangri-La Group. In this role, Chef Franco was responsible for the success of the hotel’s culinary management and operations, as well as its food safety management system.
Prior to this appointment, Chef Franco served as the Executive Chef at Jing An Shangri-La, West Shanghai in China and Makati Shangri-La, Manila in the Philippines for four years.
Chef Franco has accumulated a wealth of experience within the Shangri-La Group, he started at the end of 2002. Prior to that, he had built 30 years of culinary experience around the world. The northern Italian native spent a number of years in Italy and Europe in various restaurants where he has accumulated experience, a love for produce and a strong passion for cooking.
