Jason Ong

Jason Ong

Head of Restaurants, Bars & Event Operations, Greater China, IHG Hotels & Resorts

Jason oversees a portfolio of over 800 hotels and 1,600 dining venues. With decades of experience in both hotel operations and corporate leadership, Jason has been instrumental in shaping IHG’s F&B strategy through phased initiatives: strengthening F&B operational foundations (2022), elevating F&B reputation (2023), driving F&B results (2024) and currently championing F&B revitalization (2025), ensuring each venue achieves operational excellence while maintaining local relevance and regional competitiveness.

His expertise also spans in hotel conversions, property openings and large-scale F&B operations, driving innovation and excellence across a few international hotel management companies.

Jason’s journey in hospitality began in the kitchen, where he built a distinguished career as a Chef, representing Singapore in prestigious international culinary competitions such as the IKA Culinary Olympics in 2000 and the Culinary World Cup – Expogast in Luxembourg in 2002. This hands-on foundation has given him a deep appreciation for the craft of hospitality, which he continues to apply at a strategic level.

Jason believes that restaurants and bars are the world’s most creative spaces, where great food engages the senses and thoughtfully designed environments elevate the dining experience, making each moment truly memorable. Under his leadership, IHG Greater China venues have evolved into community landmarks – blending regional heritage with global standards through market-driven design. Each venue tells a story: from chefs preserving ancient recipes to mixologists reinterpreting local ingredients. This ‘design for the market, in the market’ approach proves that when hotels listen with their kitchens, they don't just serve meals – they build lasting cultural connections.
