A British national based in Singapore since 2007, Nigel Moore is a highly experienced food and beverage operations leader with over 25 years of hospitality experience in five-star luxury international hotels, private members’ clubs and stand-alone restaurants, gaining exposure to various countries, cultures and cuisines.
In his past roles, Nigel has been involved with marketing, public relations, human resources, project management, strategic planning, pre-opening and execution of new hotels. He is experienced in the development of concepts and operating philosophies for new hotels and refurbishment programmes of existing outlets.
Experienced in developing, mentoring and building the right teams, Nigel’s entrepreneurial approach to concepts and design has led to successful hotel openings and project executions, including the development of restaurant revenue management systems and marketing and public relations strategies for restaurants and bars. Nigel is also well versed in all technological F&B systems on the market and has a sound knowledge of digital solutions for F&B.
Prior to his current role, Nigel was the Director, F&B Asia Pacific for FRHI Hotels & Resorts (Raffles, Fairmont, Swissôtel) from 2013 until Accor’s acquisition of the brands in 2017. Nigel has also held several operational roles including Director Operations for The Empire Hotel & Country Club in Brunei Darussalam.
