Shane has 30 years experience in the hospitality industry living in Australia, New Zealand, London, Malaysia, India, China, Indonesia, Vietnam, Thailand, Singapore, Japan, Korea, Maldives and Middle East, he is a career culinarian, F&B developer and concept creator.
Shane is based in the IHG corporate office in Bangkok, Thailand and is responsible for all concepts, operations and pre-opening of food & beverage operations including restaurants, bars, banquet and catering facilities in Asia, Middle East & Africa (AMEA). He oversees the food & beverage in 260 existing hotels comprising 820 restaurants, with around 20 new hotels, 65 restaurants opening per year. Critical deliverables include concept ideation and driving new restaurant concept performance, culinary and service arenas of IHG’s operational hotels.
Shane has also successfully led the renovation of iconic InterContinental hotels across Asia- Pacific region and has crafted and launched the F&B proposition for two new brands: Holiday Inn Express brand & Hotel Indigo in the AMEA region, building strong operating processes, standards and platforms to support the region’s rapid growth.
Shane’s experience has been recognised through many industry accolades including the San Pellegrino Top 50 Restaurant Asia voting academy, and being a guest speaker at industry events.
